Can the MX4 or MX5 support the use of the DS18B20?

Both!

They both support dallas one-wire devices. It's the LCDC software that adds support for the newer DS18B20 sensor. You'll need to download the latest version of LCDC.

Waterproof?

Are the sensors sold by Matrix Orbital waterproof? (I hope so!)

Unfortunately, the temperature sensors we sell are not waterproof unless the customer has modified them to do so. By this, I mean a type epoxy applied. The disadvantage of this is that your results may be slightly skewed. :)

Covered entirely or just joints?

Thanks!

Oh, and here's the object I'm trying to put them into:
