Is it possible to connect a D-Tek Inline Temp Probe to a MX 212?
The D-Tek Inline Temp Probe only has 2 cables and the MX 212 has 3 pins......

The temp probes supported by the MX series are Dallas 1-Wire devices. These come with 3 connections, +5V, Data and Gnd. If D-Tek's Inline Temp Probe is a Dallas 1-Wire device, then the MX series can support it.
I checked the link you gave but did not see that there are two wires to the Inline Temp Probe. Do you have some kind of data sheet?

A "1-Wire" device is digital. This sensor, since it uses a thermistor and is only two wires, is analog. Basically one wire on each end of a resistor that changes value with changes in temperature. You would need to set up a current source through this device then feed the resulting voltage drop to a D/A converter for measurement.
