can anyone explain me what i could do with the 6 - General Purpose Output on it? what can i control with them and how?
does a serial to usb converter work with this vfd?

GPO's can be used to switch anything you like on through the display which draws less than around 25mA I think... so LED's or circuits to control anything you like (fans, lights etc.).
One good computer related example is using them to turn your display into a digital fan controller, and have flashy lights to tell you when you have new emails etc.

err and yep serial - usb converter shoul dwork without any problems.
