Newbie w/ real basic questions: LCD display for a car

I want to make an LCD display for an older car (no electronics or ODBII) that monitors engine temperature, controls switches at preset temps, and provides simple status indicators.
Can I do this with a matrix display, or do these need to be connected to a computer at all times?
Can I program the basic functions on my computer, and then use the LCD as a stand-alone monitor in the dash of the car running off 12v?

Is there a simpler way to do what I want?

If this is possible, what hardware & software would I need to get started? I only need a small display (2-3" wide) with backlight. have basic electronics skills and novice computer programming.
Im sure this has been addressed before, but I searched and did not find what I needed.

Hello Ad, our LCD's are not stand along units. You can program the display to do all the options you have mentioned......but you will need a computer/power supply etc. to talk to the display.

The "-V" option (avail with most displays) will run your 12Volt.
